Hello, Lykkers! Are you in the mood for something sweet and refreshing?
There’s nothing better than the taste of ripe strawberries, especially when they’re the star of a delicious dessert.
Today, we're sharing a simple and scrumptious strawberry dessert recipe that anyone can follow!
Here’s an easy and delightful strawberry shortcake recipe to satisfy your sweet tooth:
Ingredients:
2 cups fresh strawberries, hulled and sliced
2 tbsp sugar (optional)
1 ½ cups all-purpose flour
2 tbsp sugar
1 tbsp baking powder
¼ tsp salt
½ cup unsalted butter, chilled and cut into small cubes
½ cup heavy cream (plus more for whipping)
1 tsp vanilla extract
Whipped cream (for topping)
Instructions:
1. Prepare the Strawberries:
Start by preparing the strawberries. Wash and hull them, then slice them into thin pieces. Sprinkle with 2 tablespoons of sugar (if desired) and set them aside. The sugar will help draw out the natural juices, creating a delicious syrup.
2. Make the Shortcake Biscuits:
- In a large bowl, combine the flour, sugar, baking powder, and salt. Mix well.
- Add the chilled butter cubes to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
- Slowly add in the heavy cream and vanilla extract, stirring gently until the dough comes together. Be careful not to overwork the dough.
3. Shape the Shortcakes:
- Turn the dough out onto a floured surface and gently knead it a few times until it forms a soft ball. Pat the dough into a 1-inch thick rectangle and use a round biscuit cutter or a glass to cut out the shortcakes. You should be able to make about 6 shortcakes.
- Place the shortcakes onto a baking sheet lined with parchment paper and bake at 400°F (200°C) for 12-15 minutes, or until they’re golden brown.
- While the shortcakes bake, whip the cream until stiff peaks form (this will be your topping).
- Once the shortcakes are done, remove them from the oven and let them cool for a few minutes. Slice each shortcake in half horizontally.
- Spoon a generous amount of the macerated strawberries (and their syrup) onto the bottom half of each shortcake, followed by a dollop of whipped cream. Top with the other half of the shortcake and add a little extra whipped cream and strawberries on top.
Additional Tips for Perfect Strawberry Shortcake:
- For a twist on this classic recipe, consider adding a layer of chocolate ganache or a drizzle of honey over the whipped cream.
- If you’re looking for a healthier version, swap the heavy cream for Greek yogurt and reduce the sugar in the strawberries.
- Serve this dessert chilled or at room temperature for the best flavor!
